It has Convection Mode for roasting, gratinating, baking and browning - Convection Mode with added steam (where the quantity of steam added can be varied) and Steam Mode for stewing, blanching, poaching and regeneration. The oven can also be used for low temperature cooking (for steaming, regeneration, blanching and pouch cooking) where you have the ability to select the resultant temperature .It has a built in program system that can save your favourite cooking settings and built in recipes that are very easy to use.
